Lavender Infused Banana Bread

A new twist on a classic. This Lavender Infused Banana Bread is the perfect treat and a delightful way to use up those overripe bananas. Fresh or dried, lavender is one of those scents that is soothing, subtle, and so wonderful. And remember, dried lavender is stronger than fresh lavender so if you’re using dried, use half as much to achieve the same amount of flavor if a recipe calls for fresh lavender. Adding too much can impart some bitterness, so just a caution. 

Ingredients

  • 2 cups flour

  • 1 teaspoon baking soda

  • 1 1/2 cups sugar

  • 1/2 teaspoon salt

  • 6 tablespoons butter

  • 6 ounces plain yogurt

  • 2 eggs

  • 3 ripe bananas, mashed

  • 1 teaspoon vanilla extract

  • 2 tablespoons dried lavender buds (4 tablespoons if using fresh lavender buds)

Directions

  1. Preheat oven to 350 degrees. Line one bread pan with parchment paper.

  2. In a small pot, cook lavender on high heat for about a minute until it begins to release scent. Then, turn down heat to medium-low and add butter to the pan. Allow to cook for 2 more minutes, stirring occasionally. Make sure not to burn the butter.

  3. Using a sieve, strain most of the lavender buds out, keeping just 1/2 teaspoon of the cooked lavender buds.

  4. In a large bowl, combine flour, baking soda, salt, and sugar.

  5. In a separate bowl, mix the eggs, yogurt, and vanilla. Then add the infused butter and fold in the mashed banana and the 1/2 teaspoon of cooked lavender buds. Gradually fold in the flour mixture.

  6. Pour the batter into the prepared bread pan.

  7. Bake for 45 minutes or until a knife inserted in the center comes out clean.
